HERB CRUSTED BAKED SALMON CROSTINI

1 Coles Salmon Side with tangy crushed herbs

2 x Coles French sticks, sliced

Heat an oven to 180deg C.

Place the salmon on a baking tray skin side down. Drizzle with oil and place into the oven. Cook got 28-30 minutes until cooked through.

Spread the sliced bread onto a baking tray drizzle with oil and bake until crisp.

Serve the salmon on a platter or baking tray with a side toasted French stick and some lemon wedges.

Let the diners make their own crostini at the table.

ROAST PORK & POTATOES

Roast Pork

1 x Coles Boneless Pork Leg Roast

Sea salt

Roast potatoes

2kg Coles potatoes, peeled and cut in half or quarters so all are a similar size

Olive oil

Heat an oven to 240deg c.

Rub the pork skin with salt and place in the oven. Cook for 30minutes until the skin starts to bubble. Turn the oven down to 180 deg c. Continue cooking until the pork is cooked through. Rest for 25-30 minutes

Add the potatoes into a large pot of water with a pinch of salt. Bring tot eh boil and cook until the are tender the whole way through. Drain and allow to steam then place into the fridge to cool and dry out.

Lay the potatoes onto a flat roasting tray and drizzle with olive oil and a pinch of salt. When you turn down the oven with the pork in it add the potatoes and cook until golden crispy.

Carve the pork and serve the potatoes.

SUPER SIMPLE COLESLAW

1 x Coles fine cut slaw

3tbs Coles Coleslaw dressing

Mix together the fine cut coleslaw and the dressing toss until coated.

Serve alongside the pork and potatoes.

HOT CROSS BUN ICE CREAM SANDWICHES

2 x Coles Hot Cross Bun 6pack

1 x 1 ltr Coles Vanilla Ice Cream

Method

Toast the Hot cross buns in an oven or toaster until cooked to your liking. Scoop a ball of ice cream that will fil on one of the pieces of hot X bun. Add the ice cream to the bread and top with the other layer of hot cross bun.
